 Letters and Ramblings to my daughter, Sarah.  Each of these is also a separate post, but I  wanted to gather each of them and put on one page, so it's like a letter to my daughter, and her daughter.

A new online friend of mine shared an awesome recipe and I just had to share with you and anyone coming by.  Renee over at There Is Beauty In Grace posted Pumpkin Soup & Cranberry Cornmeal Biscuits. It sounded so wonderful.  This blog has been removed, BUT I left the recipe titles up, in case you want to google a recipe for them. 

I have done a similar recipe using Sweet Potatoes, Butternut Squash could also be used,  AND if you make your own bread bowls,  WOW!!!

Only thing I did different, was I used Heavy Cream instead of the milk, but use what you have.

I hope to write many of these letters to you, there are so many things I wanted to share with you over the years, but time and opportunities were missed and lost, and time often got in the way.  You may not appreciate these now, but I hope and pray that some day you will.

Bread recipes-we took out 1/4 cup flour and used 1/4 cup potato flakes.
The first bread machine recipe we used.
We adjusted the water and oil, using 1 1/4 cup water and 4 Tbsp oil.
Another option.

Flax Seed Bread
7/8 cup water, (one cup minus 2 tbsp)
2 Tbsp margarine, or butter*
3 Tbsp molasses
1 tsp salt
2 Tbsp Hodgson Mill Milled Flax Seed
1 Tbsp Hodgson Mill Vital Wheat Gluten, optional
2 1/2 cups Hodgson Mill Best for Bread Flour
1 1/2 Tbsp nonfat dry milk
1 1/2 tsp Hodgson Mill Active Dry Yeast

Pizza Bites
1 cup Hodgson Mill Whole Wheat Flour
1 packet Hodgson Mill Fast Rise Yeast
1 tsp sea salt
1 tsp brown sugar
1 large egg, beaten
1 1/2 cups water, warm
12 oz mozzarella, cubed (about 40 pieces)
pepperoni, sliced
olive oil, topping
Italian seasoning, topping
parmesan, grated, topping
kosher salt, topping

Directions

In a large bowl or bread machine, combine the flours, yeast, brown sugar, egg and water.  Mix ingredients together and knead until you have achieved a soft but not sticky dough – add additional water if needed. After 12 minutes on the dough cycle in a bread machine, turn the machine off.   Cover the dough or shut the lid and allow it to rest for 30 minutes.  Preheat the oven to 400˚F.  Lightly grease two 9-inch pie plates or baking pans.  Divide the dough into 30-35 equal-sized pieces.  Take a piece of dough and place one or two pieces of pepperoni on top and two cubes of cheese.  Wrap the dough around the pepperoni and cheese and pinch closed.  Place the ball seam-side down in a baking dish.  Repeat with the remaining dough pieces.

Personally I would use a spice cake instead of yellow.

Today's task...

Cook remaining frozen chicken backs, debone, chop, package and freeze.  Keep enough back for 3 recipes of chicken pie filling and chicken noodle soup (made in crockpot to be eaten tomorrow and the remaining frozen for later).

Chicken Gravy for Chicken Pie
Brown 7 T flour in a pan with 4 T butter.  Gradually add enough chicken broth to make a good gravy.  I use half broth/stock and half goats milk when we have it on hand.

You do not have to have a pie crust on the bottom of your chicken pie, you can also use a 9x13 pan and have just a top crust, serve with fresh bread or biscuits.

Noodles for Chicken Noodle Soup
6 Eggs
6 T light cream or canned milk (or goats milk)
1 Tbsp salt
4 1/2 C flour.

Knead, and divide into fourthds.  Roll out on lightly floured surface until paper thin.  Dry 30 minutes, cut into strips, drop into boiling salted water and cook.  You can also roll it out, then roll up into jelly roll and slice, or freeze for later and slice when it has thawed.
