What's for Dinner???
Don't you just dread that question? I know I do, especially right now. Chronic back pain began to sneak up on me mid-July and has only intensified. Usually my back gives me grief just in the early Spring and late Fall, right before the weather changes, or at least temps drop a bit around here. This time it put me flat on my back, or side I should say, sitting only makes it worse, unless it is on a yoga ball or a hard wood chair, forget sitting in the recliner or computer chair, that means I'm off to bed and dragging my left leg behind me because my hip hurts so bad I cannot lift my leg off the floor.
So, how do I handle dinner, not to mention keeping the house in livable condition? I've got 3 resources that are my go-to, no-fail, works every time, sure-fire, helps.
#1 is FLYLady, when things get bad and I cannot find the floor for the mess, I just hop on over there, see what the zone of the week is, pull out my binder, and do 15 minutes of what needs to be done. It really is true that you can accomplish so much in 15 minutes, which right now is about all I can handle. So, now that the kitchen sink and counter are taken care of, what about dinner????
#2 and #3 are Hillbilly Housewife and Living on a Dime.
Hillbilly Housewife is where I went for dinner or lunch tomorrow. I am making Crock Pot Split Pea Soup. The split peas cost under a dollar and I used bacon instead of ham, (using what I have on hand) the bacon costing just under $3, but I only used 1/4 of the package (if that much) so still under $1. I also grow most of my own herbs and had some home grown and store bought seasonings on hand so for about $2 I am making enough to feed my family 1 meal plus lunch left overs for the kids and I. It may be a bit warm down here for soups yet, but hubby keeps the air on about 60 degrees so when he comes home from being in the sun all day he can relax, so the kids and I really appreciate soups for lunch and dinner. Now I just need to decide which type of bread to fix with it, maybe jalapeƱo cheddar....
